cucumber-lemon sparkling cocktail.

i recently came across 2 cocktail recipes that sounded perfectly summery: a cucumber lemon vodka (via paperless post, of all places), and sparkling lemon drops via poppytalk.  the ingredients overlapped enough that i thought i'd try and combine them when a girlfriend came over for dinner and drinks a few weeks ago.  the result was worth sharing!




diane's cucumber-lemon sparkling cocktail 

2 c. vodka, chilled
1 c. lemonade 
(go with simply lemonade or make your own - 
don't want too sweet & processed)
1/2 c. cold water 
thin cucumber & lemon slices
handful of mint leaves, slightly muddled
1 bottle prosecco
simple syrup, to taste

combine all ingredients except prosecco, simple syrup, 
and some of the lemon & cucumber slices.

fill tumbler with ice, pour mixture 1/2 - 2/3 full.

add a dribble of simple syrup to each glass.
(or more to taste)

top with prosecco, garnish with fruit.

give it a quick stir.
(but not too much, as it reduces the bubbles)

enjoy.

add a red & blue straw and you've got your 4th of july cocktail ;)
