cup of tea.

here are a few of my favorite things: tea, friends, and fairy tales.  conclusion to be reached: the royal wedding provided the perfect excuse to co-host a little tea party with my good friend caroline this weekend.  we had a lot of fun with it!  i borrowed my mom's tea set, we made tons of finger food, and added a few little british touches. 





 





 





 





and, by special request:

the barefoot contessa's granola
2 cups rolled oats (not instant)
1 cup sweetened, shredded coconut
1 cup sliced or slivered almonds
6 T. vegetable oil
4 T. honey

preheat oven to 350 degrees.
mix dry ingredients together, set aside.
in separate bowl, whisk together oil and honey. 
pour liquid mixture over dry ingredients, and mix to coat completely.
pour onto a sheet pan lined with parchment paper and place in oven.
bake 15-20 minutes, until golden brown, stirring every 5 minutes. 

careful: the granola tends to burn quickly, so pay close attention towards the end!

remove from oven and stir occasionally as it cools.

right before serving, alternate layers of granola, yogurt, and mixed fruit.
